Does a will control all of my property?

No. Generally your will does not control all of your property. Property that has a joint owner will pass through joint ownership laws. Property that has beneficiaries on it will pass to the beneficiaries. Generally it's only property that does not have a joint owner and does not have a beneficiary on it that will pass through your will.
